Description

This wine is made from Pinotage clone PI 48 A planted on North facing slope of a Limestone Ridge very much exposed to very strong South East and North West Winds with constant cool breeze from the Atlantic Ocean in the South. The top soil is very shallow and the vine roots literally grow into Limestone rocks. These extreme conditions result in Pinotage bunches which are nearly half the size and much smaller berries compared to a normal Pinotage bunch. This fruit results in wine with deep colour, intense fruit aroma and well-structured tannins. Grapes were selected and harvested by hand to ensure optimum quality and left overnight in a cold room in the small crates at 4 to 6°C. After destemming, whole berries were cold soaked for 6 days before spontaneous fermentation with indigenous yeast species. Fermentation was controlled at lower temperatures to allow for longer skin maceration and extract finer tannins. Malolactic fermentation was completed in barriques followed by maturation for 21 months in French, American and Hungarian oak, 70% new oak and 30% 2nd fill oak barriques.
