Description

This wine is made from Chenin blanc clone CN 422 A planted on a Single Vineyard block on alkaline limestone soil. Grapes were harvested by hand and left overnight in a cold room. The following morning the grapes were pressed whole bunch and the juice left to clarify for 36 hours and then racked to barriques for fermentation. Fermented with indigenous yeast species for 23 days followed by malolactic fermentation and maturation for 11 months in 40% new French and Hungarian oak barriques and 60% 2nd fill barriques. The first month after malolactic fermentation the wine was battonaged in the barriques.
